The major reason for this is that high heat can harm pressure canners, particularly newer and thinner aluminum models. Simple warping to severe warping (where the lid may dislodge) to fusing of the aluminum canner to the LP stove are all possibilities. In all cases, the damage renders the canner inoperable.”
